Berries and Whipped Cream

2 c heavy whipping cream
1 tsp vanilla extract
1 tbl honey
sprig of mint (optional)
chia seeds (optional)
5-15 minutes, depending on your equipment.
Using a hand mixer or your actual hand and a whisk, whip the cream. I like to add a few drops of vanilla extract and a drizzle of honey.
Spoon whipped cream into adorable jars. Add fresh berries and a sprinkle of chia seeds on top plus a sprig of mint if you have it on hand.
I understand this is not revolutionary, but it is really yummy, simple, and healthy (as far as dessert goes) and is the perfect dessert for a hot summer night. I am of the mind that fat is better than carbs and I don't even need to add sweetness to satisfy my treat cravings.
